Indulge in the rich flavors of a Cajun classic with this Old-Fashioned Dirty Rice recipe. Classic Louisiana cuisine with the ease of one-pot cooking and Cajun Spices.
Combine the seasoning mix: ½ teaspoon Cayenne Pepper, 1 teaspoon Salt, 1 teaspoon Black Pepper, 1.25 teaspoon Paprika, 1 teaspoon Dry Mustard, 1 teaspoon Cumin, ½ teaspoon Dried Thyme, and ½ teaspoon Dried Oregano in a small bowl and set aside.
Heat a large pot over medium heat. Heat 1 tablespoon Vegetable Oil and then add the ½ lb Ground Beef and ½ lb Ground Pork or Sausage. Crumble and blend the meat together. Once all the meat has thoroughly browned, pour through a strainer to remove extra grease and set aside.
In the now empty large pot, add the 2 tablespoon Butter, ½ cup Celery, ½ cup Yellow Onions, and ½ cup Green Bell Peppers over medium heat. Cook about 10-12 minutes, until onions are soft and translucent.
Add 2 teaspoon Minced Garlic Cloves and the seasoning mix and cook for 1-2 minutes until fragrant. Add the 2.5 cups Chicken Stock and stir, scraping up any bits from the bottom of the pot with a wooden spoon. Bring to a simmer.
Stir in the meat, the 1 cup uncooked parboiled rice, and Beef Base. Taste test and adjust seasonings if needed. Cover and bring to a simmer.
Turn the heat to low and cook for 10 minutes. Remove from heat and leave covered until the rice is tender (about 10 minutes). Garnish with Green Onions or parsley if desired. Serve immediately.

*Hot and Dirty: If you like it spicy, increase the cayenne to 1 teaspoon for some real kick or the black pepper to 1 teaspoon for slightly less. Or substitute hot breakfast sausage.
