    • Cheese Tortellini. Any stuffed tortellini works here, although I use a 5-cheese variety: try spinach and cheese or even meat-filled variety like prosciutto if you want.
    • Pesto Sauce. Use store-bought for convenience or homemade with fresh basil. Basil pesto is classic, but sun-dried tomato or arugula pesto are great swaps.
    • Cherry Tomatoes. Cherry or grape tomatoes work, or dice up larger Roma or heirloom tomatoes. A firm texture with good flavor is important.
    • Mozzarella Pearls. Substitute with diced fresh mozzarella or even small cubes of provolone or goat cheese.
    • Red Onion. Shallots or green onions make a milder substitute.
    • Salami Cubes. Swap the salami with similar proteins or cured meats like pepperoni, prosciutto, rotisserie chicken, or peas for a vegetarian version.
    • Pine Nuts (optional) - Toasted slivered almonds, chopped walnuts, or sunflower seeds make great alternatives.

    You could serve this as either a side dish or the main course -but it also pairs beautifully with a variety of simple sides if you’re building out a full meal or potluck spread. Here are some tasty options to serve with it:

    Serving Tips

    Serving Hot. This pasta salad is excellent both hot and cold! For serving warm, skip the rinse step after cooking the tortellini and serve immediately after tossing everything together. It reheats in the microwave very well too.

    Serving Cold. This pasta salad is perfect for potlucks since it can be made ahead and served cold or at room temperature. Because of the dairy (cheese) I don’t recommend it sit out from the fridge for more than 2 hours.

    FAQs

    Do I need to rinse the pasta in cold water?

    Normally, I skip rinsing pasta if I am serving it warm because I cook it quite al dente to begin with. However, because this is often served as a cold pasta, it’s better to rinse and drain the pasta to mix the other ingredients in faster.

    How do I store pasta salad?

    Leftovers keep well in the refrigerator for up to 3-4 days. Store them in an airtight container.

    Ingredients
      

    • 20 ounce cheese tortellini
    • 1 cup pesto
    • 1.5 cups cherry tomatoes halved
    • 8 ounces mozzarella pearls drained
    • ¼ cup diced red onion
    • 1 cup Salami Cubes
    • ¼ cup Pine Nuts Optional

    Instructions
     

    • Note: This recipe size is perfect for picnics or gatherings. For a side dish, divide the recipe ingredient quantities by half, which makes about 4 good sized servings.
    • Bring a large pot of salted water to boil. Add 20 ounce cheese tortellini and cook tortellini according to package instructions. Do not overcook! Rinse immediately under cold water and set aside in a large mixing bowl or serving dish. It doesn't have to be completely cold to serve.
    • To the bowl, stir in in 1 cup pesto, 1.5 cups cherry tomatoes, 8 ounces mozzarella pearls, ¼ cup diced red onion1 cup Salami Cubes. Toss well to coat. Sprinkle with ¼ cup Pine Nuts, if desired. Taste test and add pepper and salt if you like.
    • Serve immediately or cover and place in the fridge for up to 3 days.
